Now, if I can just duplicate my effort Friday night when we’re having some folks over for PIZZA……..

It's kind of like hitting the little white ball over water, isn't it? No different than hitting over land but the mental factor makes it much harder. Overcome it in pizza the same was as golf: tell yourself it isn't there and practice, practice, practice.

Well, the pizza party thing went fine last weekend.  No time for photos, but the pies with 75/25 KASL/Capoto 00, 63% hydration , 750-ish came out great. Tonight I pushed my luck with 100% Caputo 00, 60% hydration and 850-ish.  Not so good.  I undercooked them.  Oh well, live and burn....

I have been away for a while. I just got back in the USA, from a trip to Armenia and catching up here.
Your pies look awesome, and it shows you are making great progress with the 2Stone! I am happy for you. Keep at it!

Hey Chris!  I've been wondering where you were.  I've been enjoying the 2Stone.

So, what's the deal on Armenian "flat foods", or any foods for that matter?  If you feel inclined, I'm sure we'd all love to here about your trip.

I will put something together in a new thread regarding my trip to Armenia. Your pizzas look awesome here and can't wait to see how you progress into having some favorite high heat dough recipes.
