What's the type of Cheese Difaras and Bianco uses?

Is that the soft mozzarella in water you can get at the grocery store type of Mozzarela or Low Moisture/Part skim etc etc..

Bianco makes his own fresh mozzarella.  DiFara's uses a mix of grande mozz and fresh mozz, if I am not mistaken.
