It sure was a nice experience for me.  ;D  I just love to watch how pizzas bake in a WFO.  There were four pizzas made.  They were all different.  I had made two experimental doughs to try out in Steve's WFO and Steve had made two experimental doughs also.  Both of my doughs used the Ischia starter, one with Caputo flour and one with KASL.  Steve one dough was made with a Caputo poolish and KASL flour.  The other dough Steve made was with Caputo flour and cake yeast.

It was fun to be able to see how all these pies baked.

Thanks for saying the crumb look very good.

Thx for sharing a video and pictures of the pizzas Norma. The crumb shots in reply #21 & #22 look outstanding!  Great job Steve on the bake and oven.  It is gorgeous!

The crumb shot in reply 21 was the KASL dough with Ischia starter and the crumb shot is reply 22 was Steve’s poolish Caputo with KASL in the final mix. 

Steve did do a great job building his oven.  He said he never did masonry work before he built this oven.  I find that amazing also.   ;D

Gee, I feel all warm and fuzzy inside :P

This morning I got up and made some bread dough, seeing as how the oven temp was still over 500.
While I was waiting for the dough to rise, I made a combination stroboli/calzone thing with the leftover ingredients from last night. There's pepperoni, sausage, fresh basil, sweet peppers, onion, mozz., feta and ricotta in there. I brushed it before cooking with a mixture of o. oil, margerine, chopped basil and garlic. Baked about twenty minutes at 475 in the wfo with no live fire.

Oh! btw, The boli thing was made with a ball of Normas' preferment, Lehmann dough that she uses at market.

Your combination sromboli/calzone looks great. ;D  Wish I could have been there to taste it.  Glad you had use for one of the dough balls.

Your bread looks good, too.  :)  How did the stomboli/calzone and bread taste?

I was invited to Steve’s home again tonight to make pizza in his WFO.  Steve had made doughs with Caputo flour, cake yeast and had a room temperature ferment for all of his pies.  I took the two doughs that I had made with the Ischia/starter mixture.

I still am amazed how quickly a WFO bakes.  When Steve started baking the temperature on his IR gun in the middle of the oven was 910 degrees F.  As the different pies were baked he added wood.  When the last pie was baked the temperature was about 760 degrees F. 

These are the pies that were baked at Steve’s home in his WFO.
