Need help today for Gino's pizza crust!
« on: September 17, 2010, 02:08:25 PM »
Caught offguard and need to make this pizza tonight!

Just mixed dough. Should I still refrigerate until two hours before?

Any suggestions for success?

Thanks.

If you are making pizza the same day, you don't need to refrigerate the dough.
You might, however, want to punch down the dough a second time after the inevitable second rise, before pressing the dough out into your pan.

Good luck! Let us know how it comes out, and please take pictures if you can.
