I've tried a lot of things but that's one I haven't tried yet. On account of not having any wooden mallets that big.

Okay, I need some help with your comment.

I watched the video about four times and paused it and then took notice of the slow motion part very carefully.

When the man was pulling and tossing the dough in the bowl, it looked to me to be extremely smooth, soft, very wet and supple, more so than anything I've ever achieved by hand.

Are looks deceiving? Can you have a soft looking, flexible, I guess the better word is extensible, dough and have it be tough at the same time?

I'm not mistaken they're using a rice flour and I have no idea about the characteristics of that flour.

Wizzie, I was just trying to be funny is all.  If anything that would cause that dough to be tough, it would be the hammering with the mallets and not the bench flour. 

I have no idea what kind of dough they are making and for what.  Likely it was just a stunt for a game show to impress the folks watching at home.  I'm not quite sure they actually use that dough for any real baking. 

I'm not sure the protein content of rice flour but I understand it's quite low.  I've noticed that with lower protein content flours, it doesn't seem hard to make a smooth looking dough.  If you have some pastry flour or rice flour handy, try making a test dough with it to compare to a regular BF dough.  It should be quite a bit smoother looking. 

As an aside, I hope to reproduce this dough technique this weekend.  :-D

I haven't tried it BUT I bet I could if I was using the Glidescope and someone else was doing laryngoscopy for me.  It would be too hard to hold up that heavy laryngoscope with the left foot.  :-D

2 comments.

1.  This is mochi making.  I have done this in Japan.  That's not rice flour that's cooked glutinous rice colored with yomogi leaves.  It is pounded into a chewy glutinous cake that is delicious sweet or salty.

2.  Chau, are you a gas man?  I'm an EP in Portland.

Correct.  They are making mochi. 
That process of making mochi is mostly ceremonial these days.  While I was growing up in Japan, I saw this done on every New Year's Day on the street that I lived on, during the local street festival.
