caputo is always confusing.  they must make new bags once a month or something.  yours doesn't say pizzeria on the front like you normally see.  i got 20# from brickovenbaker but it came in a plastic bag.  I can't tell the difference between that and the 1kg bags of Chef.  either one is fantastic though.  i'm sure you'll have great luck with it.  when will you give it a try?

John, what 5stagione did you get ?
i ask because iam going to compare it to the superiore http://www.le5stagioni.it/5stagioni/prodotti03_superiore.html and its a bit stronger than caputo the W is a little higher...

turn the bag around.  Pizzeria is on the other side, as well as the top and bottom.

Jconk,  where did you find the 5 seasons?  I would like to try it sometime.  So far,  I have tried caputo pizzeria,  caputo rosso,  roma 00,  san felice,  and the domestic central milling reinforced.  I would like to add that to the list.  -marc

Andre,  Me too!!!

Only this is a story of the amazing pizzamaking.com.  Particularly it's stellar member Pigslips.

On a whim I responded to a post on the caputo in seattle/portland thread stating that I would love to buy a bag of caputo from seattle on pigslips run up there.  I PM'd my contact info and forgot about it.

Then today at work i got a call from Gordon (pigslips)' girlfriend/wife (??)  they were in my part of town with a bag of flour.  They actually delivered it to my work.

Mind you gordon did not know me from Adam!!  He went out of his way out of the goodness of his heart.

You rock Pigslips, I owe you big time.

I wonder what the next permutation on Pizza Sputnik will be? :chef:

That's the easy part.  The hard part; getting your pizza to look like the photo on the bag ;)

tested the caputo flour ! i really liked it... compared to the 5stagione flour its a little softer but i expected that already and the water absorption is a little lower, it was nice and silky, very nice to the touch and also very nice to open with the neapolitan slap, the oven spring was fantastic !!
