HELP!!!! where is my oven spring?

Hi,

How do you get a maximum oven spring? i am using a regular oven with a pizza stone.

we used same recipe but my just don't have that big bubble oven spring.

BTW, they are using wood fired oven tho.

A while back, I came up with a list of factors that can affect oven spring, at Reply 515 at http://www.pizzamaking.com/forum/index.php/topic,9908.msg104559/topicseen.html#msg104559. I think you will see from that list that it is hard in a vacuum to state why a particular dough did not exhibit the best oven spring. Maybe you can isolate, or adopt, the most important factors in your particular case.

Not sure if you are just kidding around but the first pie looks like it has plenty of spring. Looks pretty tasty actually.

He used the same recipe as that one, it is not his.
