DKM's Chicago Deep Dish Pizza Recipe - Dough Help

Hi,

I could only locate a 12" deep dish seasoned pan. Can anyone tell me how to decrease the amounts for the dough recipe?  The recipe I have is for DKM's chicago deep dish pizza found on the home page.

=======================
3 cups All-purpose flour 
1 cup Water
cup Yellow cornmeal
cup Canola oil
1 teaspoon Sugar
1 teaspoon Salt 
2 teaspoons Active dry yeast

I went to pizza hut and offered the dude a six pack for a large deep dish pan.

He was happy to trade.

How funny!  I actually called Pizza Hut last night and they said they would not sell me one!

It took me a few tries. I finally found a place that had a younger guy working as a asst mgr. (meaning he could give a crap less).  Go up there in person and see if they will sell you one. Good luck

You said you got a large. 

Did you get a 16" pan there?  Is that their largest pan size?

I use 1.5 cups flour for a 10" deep dish pan, so you can do the math from there. If you roll the dough out thin enough (the way they do at the Chicago deep dish places, you could get by with 1.5 cups for a 12" pan.

Yes, I got a large so I think it is a 16' pan.  I don't change the recipe any though.

By the way "it sure is a good recipe" Thanks again DKM. I had one Sunday night.

Thanks, everyone!  I am set.  I found a large deep-dish pan and made one last night!  It turned out great.

The only thing I could not find were the "6 IN 1" tomatoes.  I had to use S&W Ready-Cut.  Not bad, but I want to see how great it would be with "6 IN 1" brand.

PS - do you drain the juice from the cans first?  It seemed really watery when I dumped them into a bowl.

Also, for those that have an electric oven: I baked it for 8 minutes, turned it once, and then went for 8 more.  PERFECT!

If they seem watery I would drain them.  the 6-in-1 are cushed in heavy puree so they are already think.  I have begun recently letting them drain for a couple of minutes because I don't want to add anything to to thinken them.
