Thanks for posting the link about flour. That is a good article about flour. I didnít know flour was around for so many years. 

I still wonder if humidity or ambient temperatures didnít have something to do with the flour I used for the poolish in my preferment Lehmann dough, after reading this article. 

I will refer back to this article more to be able to understand flour.
