Anyone with experience using Xanthan gum?

I've been experimenting with making a "crust" out of mashed potatoes and was going to try using Xanthan gum to bind it together a little better.  Is there anyone who is familiar with it with some advice?   I'm mostly curious about how much I should be using.  Thanks.
