I work for a pizzeria which is a family owned small business. We do everything fresh in house, mix our dough, sauce, grate cheese, etc. We use premium meat products and overall we put a delicious product together. I notice though that our thin crust pizzas especially cheese or pepperoni are often really greasy and it shows under the pie when you pull slices out of a box. If there are many toppings I believe the grease is absorbed in the pie. I notice when I have pizza hut thin pepperoni it is not nearly as greasy. They dont seem to put as much cheese on the pizza. Is there something different we could do with out comprimising the ammount of cheese we like to use roughly 11 oz per 14in thin pizza. Thanks for any in put.
