What is the best type of mozza cheese to use?
Brand name not needed, just % skim milk, whole milk?
My cheese seems to turn out too dark

From a flavor and texture standpoint, there is no such thing as the "best" mozzarella to use. It is a personal preference kind of thing. But, in addition to finding a mozzarella cheese or cheese blend that you like, you have to take into account that the cheese has to match your oven and oven temperature and bake time.
