la buonavita,

From a flavor and texture standpoint, there is no such thing as the "best" mozzarella to use. It is a personal preference kind of thing. But, in addition to finding a mozzarella cheese or cheese blend that you like, you have to take into account that the cheese has to match your oven and oven temperature and bake time. This is a topic that is discussed in the thread at http://www.pizzamaking.com/forum/index.php/topic,6687.msg57370/topicseen.html#msg57370 and also at Reply 15 at http://www.pizzamaking.com/forum/index.php/topic,10395.msg91692/topicseen.html#msg91692 and Reply 15 at http://www.pizzamaking.com/forum/index.php/topic,2530.msg39825/topicseen.html#msg39825.
