wild yeast sponge starter

In his book, Classic Sourdoughs, at page 200, Ed Wood describes a sponge culture that is about 65% flour and 35% water. You can concoct a natural preferment pretty much as you want although it will behave differently in terms of fermentation time based on its consistency.
