Hello all
I would appreciate any help. I am looking into opening a pizzeria.
My first question is do I need to have a Hood system installed with a fire suppression system for a gas pizza oven?

No, not unless your state or county or local fire code requires it. Unless, your insurance requires it.

not installing a hood with a gas oven is something, that if your shop has closed ventilation, you will regret.

That type of question comes up from time to time over at the PMQ Think Tank forum at

where mostly commercial pizza operators visit. You might want to register and post your question there. The guy who often answers questions like yours is George Mills, who is in the pizza equipment business. Some members even specifically direct their questions to him in the topic line hoping that he will spot them.
