The roma foods 00 is every bit as good as caputo and san felice, so I have high hopes for this one. Also does yours have poly-0 mozzarella? Mine does and that cheese is so good. Also RD is a great source for plugra butter, which tastes amazing. It only comes around every once in a while, but if you see saporito special pack whole peeled tomatoes buy them!! Not sure why, but my RD only had them for a few weeks. They were on sale at $12 a case, and then they were all gone. I don't own a camera, but ill try to borrow one for you when I bake them up. I like the crispyness that a poolish adds, but I feel like it detracts a little from texture, and doesn't add all that much flavor. I still favor wild yeast, but im having fun experimenting.
