my son was a student at the french culinary institute.in his baking class they were making pizza .the chef went through the deal about no oil no sugar in the dough. my son said we do it wrong with our method. i happened to be visiting when they did there pizza cook off it was inedible . i told my son that our method is better than the crap they just feed me. he stated making our style pizza for his family meal, it became very popular especially with the chefs. i bugged adam from slice to visit the fci for a pie and he was nice enough to go. this is his little story on the visit.

Nice write up. Can't say I agree that one recipe is wrong and another is right. Just right for you. Viva la difference!
