Playin Around w/ MBE

Took a detour from my regular grill and slapped some extra dough onto my newly crafted MBE.  No crumb shots but I got a great chew with slightly crispy exterior on the bones.  Dough was roughly 70% hydration, 12 hour bulk cold ferment, then balled up for another 6 hours.

Congrats!  That is a spectacular looking pie?   what type of flour did you use?  :chef:

Thanks Jackie, flour is Pivetti 00, but I think I'm going to switch to some of the central milling 00 shortly...

Yep, that one timed at almost exactly 3:30.  Stone temp was in the 700 range.

Thanks... I don't have any shots but will take some as I think I'm going to be cooking up more pies tomorrow.  I should mention that I think I mis-typed in my op, as I'm using a 18" Weber and not the mini, so I guess it's "LBE"

!8" diameter is my size also. So I guess you would call it a LBE.
