Hi folks, I am new to all this but I have been on the prowl for ingredients, I am pretty sure I won't ever find Buffalo mozza here on Canada's East coast but I may have found an easy source for good pizza flour.
After checking Sobey's and Superstore with no success, (4g protein per 100g) I decided to try the Bulk Barn, and found several flours with 12g of protein per 100g. I went with unbleached bread flour, which was about 2 bucks per kg.
I hope this is helpful to some people, and I hope I can make a good pizza with it. Cheers!
