FM,  thanks for the info,  that sounds good,  and expensive,  but good.  I for one would like to try a dry buffalo mozz on NY style pizza,  that might be over the top!

A friend of mine in Wisconsin sent me the article in the paper about the guy that supplies the Buffalo milk.  He sings praise songs to calm the animals when he's milking them.   I was considering buying some to try.  I believe it's about $16/lb or so plus shipping.  I already get a good imported buffala locally at that price so I decided to hold off.    I would love to hear someone's opinion of the cheese though.

I ordered 2 lbs of this cheese about a month ago. They came as four balls vacuum sealed - not in whey - and were semi-dry. They were, unfortunately, very disappointing. They tasted nothing like bufala from Italy, and frankly were not as good as fresh mozzarella in whey. They just tasted like average mozzarella, albeit with a slight, slight tang.

....and in the stock market, Cedar Grove Cheese took a hit as it stock slides due to a lukewarm review of it's flagship product, Fresh Water Buffalo Mozzarella....

It's nice that the membership has such savvy and discerning palates.  Maybe it's a good product.  But, excellence lives in the last percentile of the effort.

Just goes to show ya.  You can't slap a cool name on a product and phone it in.

Whew, good to know. I didn't even know what Buffalo Mozzarella was until I joined the forum. I just thought the article in the paper was interesting, and I like the other types of cheese they make so I just put 2 and 2 together and made an assumption.

So, that being said, I'd like to try some of this stuff out. I'm looking for opinions on
who makes a good product (that you can buy), and what should it look/taste like?
