Convection Vs. Infrared

Hi all, First post here!

I was curious if any one has had any experience with infrared conveyor ovens?  We've always used conveyor convection in my shops, but was thinking of buying a CTX DZ33II for a new shop, until I read it was infrared as opposed to convection.  I guess I was curious if pies will come out the same or different.  Thanks for the thoughts!
