Visited One Speed in Sacramento, Ca on Sunday night.
My wife and I split a red beet, green bean, feta, and hazelnut salad. Very good.
Me wife had the risotto with mushrooms, cheese, and bacon. Very good.
I had a ricotta, sheep's milk cheese, spinach, and roasted red pepper pizza. Very good as well.
The house red is only $11 for a 3 glass carafe of snappy red barbera wine.
Their pizza is AP flour, 55% hydration, and always made the day before and cold fermented. Their dough looked really workable.
