I can confirm what the article says about the Detroit-style pans. A few months ago, while I was working on the Jet's reverse engineering/cloning project, I called a Michigan-based company, P.A. Products (
http://www.paprod.com/), to see if they could shed any light on the types and sizes of pans that Jet's (or Buddy's) uses in its stores. I no sooner got the words out of my mouth when the sales rep I spoke with told me that they were out of the deep-dish pans. He was not particularly helpful in suggesting who else in the area might be making such pans. He may have been playing coy with me, especially if they are the ones making pans for Buddy's and/or Jet's.
