Angelo's Pizza Mozzarella

Does anyone know the brand and/or source of the Mozzarella that Angelo's Coal Oven Pizza (several NYC locations, including on W. 57th St.) uses.  The texture and taste are unlike mozzarella on other pizzas.  It does not have the melted look of other pizzas.  It is very white, very thinly sliced and (for want of a better word), "dryer."
