Always Sticking!

So, I tried some "In Teglio" style pizzas, and those cooked in a pan, but my pizza always sticks to the pan after cooking!

The only pan that hasnt had sticking is my "PizzaTools" pan.

Any idea why this is and how to stop it?!

Do you use oil in the pan, before you put the dough in?  I don’t think you want to fry pizza in teglia and I only oil my pans a little.  I have tried different pans and none of the pizza in teglia crusts have stuck to any of the pans.

I do oil my pans, though i consider it to be lightly. Could this be part of the reason?

yes the oil cooks into the dough
pizza, it makes our world go round.

The dough may be overfermented, and this will stick due to the excess sugars. Also, try not get too much flour in the pan underneath the dough.
