I own or have borrowed from the library just about every one of the books mentioned, and that's a good list of what could be considered the "who's who" of the bread baking world. You will learn from each and every one of them.

My favorit bread books are -
Taste of Bread - Professor Raymond Calvel
The Bread Builders - Daniel Wing and Alan Scott
Many other nice ones, but these really speak to me on a how and why level, without glossy pics, etc.
