Steve's recommendation on using the 5 pound bags of shredded Stella Mozzarella from Sam’s was a good one. Even though it contains cellulose is does not turn gray like the paper packed Kraft cheese.

Did a pizza test a couple of weeks ago between Poly-O and Sam's shredded Stella on two NY styles. The Poly-O had a slightly milder flavor but other than that, they cooked the same.
