How to keep cheddar cheese fresh?

Greetings

I use white cheddar cheese for my pizzas (and sometimes red cheddar). My family prefers it over mozzarella cheese.
But when I keep it in the fridge, white mold builds up on its surface, although its wrapped in plastic film.
Is there any way to keep it from building that mold.

If I freeze it, the taste is not the same. It loses a lot of its taste at the freezer, it seems.
I noticed that even slicing cheddar at the table is more tasty than pre-sliced cheddar cheese. Did anyone notice this too?

I bought some hard cheeses recently and a couple of friends who were with me at the time told me that if I wrapped the pieces of cheese in aluminum foil that would prevent the cheeses from going bad. They swore that was true. I checked the cheeses for this post and they have not developed any mold thus far.

Yep, I wrap my left over block cheese in foil and place in a zip lock baggy.
