Latest Sicilian Style

Photos of two of the three Sicilian styles.  Short proof time of only 1:45.  I need to remember to turn the oven to convection bake from convection roast.  That is why the top of one is so dark.

Nice. Is the cheese on the bottom with sauce scattered on top, or the other way around?

The cheese is on top of the sauce. I had crumbled pepperoni from a barbecue pizza I made last week and sprinkled it on top.
