You can rehydrate store bought sun dried toms.
You can slow roast your own toms or dehydrate them to your degree of doneness.
You can also buy sdt that are still soft, vac packed
You can rehydrate those real hard sdt, and store them in spiced oil (I use a drop of lemon juice for ph balance, but I really don't think its neccesary cause tomatoes are high in acidity.
Or, like many pizza places, put the sdt UNDER the cheese....this way they don't scorch.
