Soprasetta

I bought Boar's Head Soprasetta from a local buther shop and made a pie last weekend.  I highly recommend you give it a try as it was delicious.  What is interesting is that the flavor was completely different when cooked.  The only caution I would give is to cut it thinly as it becomes more chewy if too thick.

I agree....Especially the Hot Sopressata.
I ask them at the counter to slice half of it for me. They slice it so thin it's a sin.

I'll have to look for the hot stuff.  After getting it home and slicing, I though I should have just asked them to slice it for me.

I love both forms on pies or crackers with some sharp provolone, but I find the hot is even better than pepperoni. I might ask the deli to slice it for me next time. Thanks for the tip.
