Pillsbury Balancer flour

Some Pizza eateries here in  NJ use this flour for their Pizza. Has anyone one else heard about this type of flour & what type of flour it is equivalent to? Where can it be purchased?

I used Pillsbury Balancer when I first started making pizza.  It is bromated.  I know a couple of other pizzerias in my area do use Pillsbury Balancer also.  Pillsbury Balancer is a high-gluten flour, but I am not sure of the protein content. It works fine for pizza.  I donít know what area your are from, but I bought my Pillsbury Balancer from a distributor.

Pillsbury has had a rather checkered past in the flour business. On the foodservice side, Pillsbury flours are offered by General Mills: http://pillsburybakery.com/products/ViewProduct.aspx?productId=216&CatId=36. Dawn Foods in Edison should carry it. Call first (732) 287-1111.  I know that Corrado's in Clifton stocks it, but that's probably too far for you.  There's a Restaurant Depot in Philly, but you need a tax id number (or know someone who does), and, they may not have the Pillsbury. If they don't, just get the All Trumps. As Scott posted, it's very similar.
