Thought i would try out some brew dough.
So i just made two batches of dough using this recipe.
Single 14" batch
KABF = 345g
VWG = 10g
IDY = 1 tsp
Kosher Salt = 1 TBSP
Sugar = 1 1/2 TBSP
Olive Oil = 1 TBSP
105F Beer = 6 oz
105F Water = 1.5 oz
Anyway I made both batches exactly the same, with same measuring spoons, same scale, same mixer, same liquid cup. I mixed ingredients till no longer sticks to mixing bowl (about 2 min). I autolyzed for 5 minutes. Knead with dough hook for 15 minutes. Both batches done exactly the same using a timer.
So for some reason the second batch stuck to the bottom of the mixing bowl the entire time the kneading process. I didnt want to deviate from the recipe so i left it go and used a bit of spray oil to form a ball at the end before putting in the fridge to cold ferment.
Do you think it will be ok, and anyone know why this happened?
