I would like advice on where to go for training in Neapolitan Style Pizza and what brand of ovens would be best? I would like to open a pizzeria and this is the direction I would like to take. I have been out of the restaurant/bread baking business for over 10 years so I am quite rusty. I am looking for some serious training before I get anything else started. Any advice/suggestions on where to train and brands of equipment would be appreciated.
