I have two Japanese cookbooks, both have recipes for this dish and both refer to them as "pancakes" with perhaps a passing mention of them being called Japanese "pizza". Both recipes call out for flour and baking powder. I understand them to be an urban dish and not rural in nature. One of the striking things I have noticed about my Japanese cookbooks, there are NO baked dishes as most kitchens do not have ovens although some do have kamados located outside. Bread is a relatively new food to Japan, if I recall correctly was introduced by the Portuguese and the Dutch. The internet has many recipes for it such as:
