Varasano's Spreadsheet
« on: May 18, 2005, 12:21:45 PM »
I downloaded this http://www.think2020.com/jv/Dough/PizzaRecipe.xls and the first few times I looked at it I really couldn't figure out how to use and why. It took a while, but it finally sunk in and I must say I'm very impressed! It formalizes and documents something I have tried to do in my head and in my notes, but a whole lot better. Thanks, Jeff.

If you like to tweak your dough formulas, you really should download this spreadsheet.

I like stumbling upon old threads and bumping them to the top.

Anyway,  I use his spreadsheet ever time I make pizza.  It is just that handy.  (Modified of course.)
I must agree that once someone figures out how to use it, it is quite handy.

I actually found Jeff's site before this one.  His dissertation on NY/Patsy's pizza is quite thorough. http://www.think2020.com/jv/recipe.htm
