« on: June 08, 2005, 09:12:03 AM »
I'm having trouble finding the correct weight for a 12" neapolitan dough ball.  Any help?  ???

Thanks

JimBob,

What David says is just about right for a 12-inch Neapolitan pizza. I'm not sure what recipe you plan to use, but the dough ball weight can vary slightly depending on the ingredients used in the recipe and the desired crust thickness.

This is about 3 oz smaller than NY style then.  I made a larger batch so I can try a few different weights but I'll start with the 9oz ball first.
