Go for something stainless steel - if you choose the plastic bowl - you cant beat tupperware bowls.

My X-large tupperware mixing bowls have taken a beating over the years and they have a lifetime warranty. The newer bowls hold 42 cups - and they all have lids.

The research I have done shows one thing to be true about these types of mixers. The arms follow a certain path. The bowl shape (on the sides) is exactly that path. So close in fact that the arms follow within a millimeter of the sides and the radius of the bowl. About the thickness of a toothpick. That being said, it might only make any real difference when kneading a lower protein flour, pastry dough or something of that nature. If the arms follow the bowl closely, that means I can make small batches. Let me get the bowl rotator working and we can play with it then.

Sweet! I assume you have something in mind for rotation? I want to say that I read that the movement of the fork on a Santos mixer actually causes the bow to rotate. Do you think that might be applicable here? As I think about it, the arms go together and probably wouldn't create a consistent rotation.... but you never know.

I think that it would work if the kneading arm (closest to the bowl) was a bit off center and could pull the bowl around in a circle. This one is modeled after a French made version. Very rare, Very old, good stuff.

I finished the kneading arm's foot yesterday. I will make the other foot today. Hopefully with the weather expectected to come on-shore this afternoon I can catch a break and use this thing soon.

I totally admit that i am over budget. I picked up a stainless steel bowl from the restaurant store. 18 inch, +/- 16 quart capacity blah, blah, blah.

The feet of the diving arms touch the sides of bowl every so slightly, then continue their motion with a 1/4" gap. 1/4" is about 3 and one half toothpicks width. That is in comparison to the one toothpick gap on the Artofex Diving Arm mixer that I enjoy as a foundation for this build. We shall see if the ship still sails....

Oh yeah! I will get another detail video and shots of the one I use next time I use it. I must say it makes some of the best dough I have ever put my hands on, so gentle with it and does not heat it up at all? Well worth my trip there to make it? I only hope your build can do the same for you!
