Can anyone please tell me if Caputo OO flour is bleached or unbleached? also, anyone know if it is bromated or un-bromated? Thanks very much.

mrbthree,
I went to the website of the miller of the Caputo 00 flour, at
http://www.molinocaputo.it/#
, and note the statement that the Molino Caputo flours are "produced with only natural ingredients". This would seem to rule out use of bleaching agents or bromates. Also, I'm pretty certain that bromates are outlawed in most Western European countries.

Caputo is un-bleached and the bromated is deemed carcinogen in Europe.
