what kind of cheese is it!!!!

  We went out for pizza last week, the cheese puzzled me, it was a runny cheese when we got the tray, I swore it was American cheese, it tasted just like American cheese but the part that has me puzzled, is the fact that it never got any firmer, like when you have a cheese sandwich it sort of get firmer, this cheese stay very soft. any ideas what it might be.

Maybe it's homemade mozzarella. 

The Tasting Room @ Town & Country in Houston make their own mozzarella in-house for their pizzas.

It was probably a processed imitation cheese.

Probably Asadero cheese.  It melts well, but once melted it has to be chilled to re-gell.  Asadero works well blended at 30-50% though.

Chet sounds to me like you went to Old Forge in PA. for pizza...  Try buying Hillview American cheese and melting on your next pizza making attempt..  Make sure you add the cheese  near the end of the bake, otherwise it will burn.
