I hope I can get the same/similar results without too much tinkering with the recipe. I do plan on working on a new crust as well. I recently went to Pizzeria Mozza in LA and loved their crust, so I have something to shoot for as far as taste and texture go.

I never tried a Pizza Mozza formula before, but if you want to see where foolishpoolish gave a link on making a Pizza Mozza dough, he posted the link at Reply 75 http://www.pizzamaking.com/forum/index.php/topic,12556.msg121392.html#msg121392 I think, but am not sure,  jkuo010 was trying to make a Pizza Mozza pizza in that thread.  Peter was trying to help jkuo010 to understand what he was trying achieve.  I posted a link to a recipe for pizza mozza dough at Reply 42 http://www.pizzamaking.com/forum/index.php/topic,12556.msg120842.html#msg120842 but donít really think that is the recipe that Pizza Mozza is using.  If you look at Pizza Quest on the episodes about Pizza Mozza, you can get an idea how the dough is made and also how the pizzas look at these links, if that is one kind of pizza you are looking to recreate. http://www.fornobravo.com/pizzaquest/webisodes/43-webisodes/142-nancy-and-mozza.html

Awesome, thanks Norma-

I really need to get a bit more accurate, and good about notations with my dough formulas. I do manage to stay in the same neighborhood with my dough, even with my inconsistency, but I think I could nail it all the time if I was to do it the same exact way every single time. It is the most important part of the pizza. We have a place here in town that thinks by loading mounds of toppings it will take care of their sub par crust. I get told time and time again that people would like that place, but their crust is horrid/cardboard/inedible. Its all in the crust!

Pat,

Trying to be consistent will help you understand your doughs better.  It least that method does help me to understand if something if wrong with my dough or final pizzas.  Each variable can change dough.  I also agree if the crust isnít good, the whole pizza wonít be any good.

Best of luck with both of your Dueling Kettles!  DKO is a good name for them.  Looking forward to your builds.  :)

..and I got a good chuckle out of your DKO abbreviation.

I almost can't keep up with all that is on the forum either.  Steve is still busily working on his WFO to get it finished. His WFO is really looking great, but it takes a lot of work. If I had an extra Weber grill, Steve and I have a friend that comes to market almost every week and he has built many different kinds of WFO and some even from a washtub.   :-D  He said a Weber grill could be used in many ways to make a pizza oven.  I wish I had a picture of the WFO that our friend built in the last few years.  I think Steve has a picture of it, if he can find it.  I also think our friend could build something out of almost nothing, because he has before.

I am about to attempt building something out of nothing myself...and I've seen plenty of that out there on the web, so I think I'll do okay.

FIrst thing I gotta do is step away from the computer, ignore Chuck (my starter) pleading to be made into dough, and get busy moving stones and brick from areas around my yard to one spot so I can SEE what I've got, and figure what more I'll need.

I hope my Weber grill will be a mean pizza machine, when it is finished.  8) I saw your thread where you are gathering material to make your own pizza oven.  You are inspirational to me too!  :) Hope your pizza oven, WFO, or whatever you are building works out well.  I was at market this afternoon, to get some extra things done, and took some pictures of how my deck oven works and maybe get some ideas how the deck oven can relate to the Weber grill.  I never really thought about it before, but my top deck has less clearance (or head space) than my bottom deck does.  I donít know if that if because heat rises or not, but will have to think about that.  I also wanted to measure how much space there is to slide a pizza on both decks.  There are some kind of metal channels, on both sides of my deck oven.  I guess they are to channel the heat up. 

I also should stay away from the computer and this forum more, too! It is too addicting.  Lol, you always make me chuckle from yours posts about building your own oven, Charlie, and other things you do.  You also have a stick to it attitude.  Great to hear that.  :)

I say best of luck to anyone that tries to build their own oven, grills, WFOís, or anything related to pizza.

Thanks for all the links to help Steve and me with my Weber mod.  :) Steve is busy right now on another project, but I will show him these links.  Steve is the person that is going to help me with the Weber mod.  I think the link that you posted for http://www.epicportions.com/2010/03/25/the-frankenweber/ does look a lot like Steve's mod he did on his portable oven in the one picture. I will ask Steve if that is his mod or another persons mod.
