Highest fat low moisture mozzarella I've seen
« on: January 16, 2016, 12:00:38 PM »
I saw this mozz at Costco and bought a bag because it's by far the highest fat I've ever seen in a low moisture mozz. It's 9g/28g. That's 50% more fat than Grande, Saputo, Polly-O, etc. which are 6g/28g. Before this, the highest I remember ever seeing is 7g/28g - Boar's Head for example.

As you would guess, it takes heat well. YOu can see it on these pies: http://www.pizzamaking.com/forum/index.php?topic=41028.msg411269#msg411269. The tase is on the funky side.

Interesting that it's preshredded. I wonder if there is a food service version of this cheese. Would love to try it.
