Beautiful weather again ? wow ! next week I am scheduled for Friday and they are calling for rain already ? Steve could this be So  ??? I thought I would show you this weekend How the fridge looks ready for a party of 50. It ain't all slapping pies allthose fresh ingredients are shopped for,packed up sliced ,diced, cooked, stored and oh yeah just a little bit  (yeah Right) of clean clean clean. I also did a topping menu for the association because I am tired of the what do you have ?? Great group condo association community party. and they raved about it !!

I know your sick of these but Heres just a few Pies. I  like any feed back as to how people thnik it can be done better, as I  I am striving to keep it  real! or any  comment as to toppings, set up...  from outsiders are also helpful and appreciated I did add the table covers ! .Nice touch look professional  Til next week

Thanks Craig everybody really enjoyed the brussel sprout pies! I had them all waiving the white surrender napkin  flag in about 1 1/2 hour! until the Nutella pies came out :)  then they cursed me out and said "how dare you bring this around after I am ready to explode" !!  OK I gotta try that! and thats whats way  cool about this gig people LOVE the freshness and variety of the whole experience  !

Don't really know how I could have not read this thread already   ??? First of all I think it's so cool that you're actually doing this, instead of just dreaming of doing it. I've been playing with the same thought for a couple of weeks now, and your thread is quite helpful of me looking deeper into this. I could see this as a stepping stone for myself to try pizzamaking off before actually going for the ultimate dream of opening my own place in Denmark.

Do you mind sharing how much the initial investment was to get it all started?

I have seen used Mobile Ovens here and on craigslist in the USA for as low as $7000 other custom builders offer  high end larger models that Can run you upward of $25,000.00 This is the first step no oven no pizza.  The you have to pull it ! $38,000 ford F350 4x4?, or $3,000.00 dodge ram 1500. Then it all a matter of the type of events you wish to do ? Private catering, Street fairs, Multi day festivals..... Do you need a mixer $1500-$5500 or going to mix by hand. Do you  need a refridgerated prep table $700- $2500 or can you use coolers..  3 comapartment sink $1500, or bucket with soap ?do you  want to use cheapo wooden peels $11 each or Custom GI metal product at $81 ea.? In other words its hard for me to answer ?  another guy just spent $180,000.00  :o on an enclosed. truck mounted Stefano Ferraro oven. I would open my own place before ever plopping down that kind of money but you get the idea I would say to be safe with all the goodies and a decent inventory of required products  $25,000.00 ?? Have I talked you out of it yet ??

One other to thing to mention.  Depending on the truck size and trailer weight once you go over a 10,000lbs truck or truck trailer combined you need to be DOT certified.  That means registration, DOT# and business placard on truck, emergency kit, fire extinguisher, log book if over 100 miles, and 2yr health cert.  I kid you not.  With the Ford you can get removable magnetic labels for when you tow.  Most police in Jersey will not bother small time people unless something looks unsafe.  Technically they can fine you a couple of grand.  In Maryland there is not much mercy.  It is one of those things that they set the number at 10K and because of the weight you are more dangerous.  Most of the guys you see towing race cars are in violation, and sometimes get pulled over.  Don't really know the situation if you do get in an accident and are not legit.  I hate to think it could void liability insurance but you might want to check.

Not at all  ;D Actually, you just sparked the fire a tad more. It's good to know what I might be facing of different challenges, but I think the biggest lesson is that you can choose the expensive way and the cheap way. I guess the best option is right down the middle, and then finding out what you need to have, and what is nice to have.

I have set up a similar business in Australia for about $12000 AUD  $8500 oven about $3500 prep fridge, table, esky, etc... (Not including vehicle)  It is great fun

Todays Gig, with the exception of 12 pies I have left for sunday I am  Taking the rest of the weekend off !! ;D
Here my 2 pic oer week  limit. During set up. 45 people with ttent amnd all. Yes steve  it called for rain and guess what ? 0.  I  guess I am boring you all with the pizza shots so I will hold off   :-[ sorry all I was getting carried away with the excitement of how well Flirting with Fire going and how the pies were really progressing out of the mobile Have a happy Holiday weekend all !!

FYI: Just about any full size pick-up truck pulling a trailer is over 10,000 pounds.  Something they've started to pay attention to here as well.

I do not know about Texas but I have trucks that travel in PA, NJ, NY, DE, and MD at times.  The Sprinter box trucks are 10,200 each and the one Sprinter van is just under 10,000 but not when towing.  I sometimes tow a 5K trailer with a scissor lift.  You then have to add the GVW for both.  The 10,200 trucks have to have the labels at all time but the van only needs it when towing.  Men have been stopped in MD and NJ for routine inspections.  It is the real deal and there is no way out.  I forgot to mention that you need to stop at weigh stations also.   I am based in PA and to get mine I had to go to a mandatory interview with a State Trooper.  He assured me it was the case in all the states I do business.   It is all on the web if you want to research it.

For a family that is SO passionate about their pizza and that spent SUCH a tremendous amount of time online researching the perfect pizza  ::), one would think they could actually figure out the inherent inferiority of a par-baked crust.
