Did you notice the fans, bottom left and behind the launch peel they saved our  @$ !! and worked like a champ! We had 1 on Il fornio  (oven guy? someone help me out with the Italian here)  and 1 fan on rotating mode  moving the air perfect !! prep table area.
Here is  me and my squash  florettes pie! daily special, fresh from the garden with marinated garlic and oil   :chef:

John, I love how your pies get better every time especially the crust, and to think that you are doing more and more pies lately.  Did you change anything with your dough formulation and method ?

Same methods Marlon,
Just gaining experience with fermentation and temp control on the job. I don't do any fancy starters poolish ... gotta be spot on and I only get 1 shot.  If my prep area is too hot I cannot go 12-17 hrs. bulk room so I extend (don't shoot me Scott ) the fridge time to 2 days plus. I do have another job, which limits my control time, and I don't have  nice little cooling  chambers  at 65 degrees to store/control  80- 100 dough balls, so the only option is the fridge :(  for the summer season only I promise !! I take them out 2-3 hours pre bake  and really watch the way they come along temp wise. I usually start with around 24 balls 3 racks  as close to room temp as possible is preferred, add flame and room temp thats the leapording. IMO - But, when the  top rack room temp ball#24 getting close to blown sometimes slip back into prep table and grab out another to get it started, its a crazy system I  have to pay close attention to or  at 95 degrees  you are stretching soup. and too cold is a nono. I could not do this without the prep table!!  I also dropped from 62% to 60% for the summer with the  high humidity ... til next week !!

Sorry you had to deal with a storm. Looks like you were able to cope with that well enough. ;D

 If I ever get the Airstream rolling, I'll just have to close the windows when the storms roll in! :-D

Steve it actually hailed pretty big for a bit hope the airstream doesnt mind a battering now and again :)
wild strom blew right through in anbout 10 min  got soaked ,cooked more, went home.... to dry out the goods! good news it got me out of there in 2 hours. Same price $

Very cool indeed. By 2 oclock I had 2 parties booked from this story!! I put an ad on Patch as well for a few bucks it a cool techy way to reach my immediate target market . Amazing how fast word travels.
Did a Great little 40 pie OPO (other people oven) today. Pizza Was a huge success in the small barrrel oven. I have to say as long as you focus on the fire and temp  this lttle guy can crank em out ! I had no help , had to walk from prep are to oven and wrapped it up including the 4 nutella  pizzas in about 3 hourd total. Fun people today ! another  great Day!  ~ :chef:

       Congratulations John, that is so awsome! You deserve it. Hard work and dedication will always pay off with great results. One can tell by the smile on your face in the photos that you are indeed doing what you love. I truely hope that one day you can make it your full time source of making a living if that is what your heart desires. I certainly believe you have the heart and passion to make it happen if you so choose. Your living my dream John, it gives me hope for the future. 43 days and counting and I'm a nervouse wreck :o
