Love the simplicity of your set up and your pies look great..nice strategy with you doughs/fermentation..I like it. By the way, is that Vermont smoked pepperoni that I see on you pie?

Steve 90% house power I have a Honda EU200 runs that and lights for night if needed
John its a struggle yes and you really have to focus on the oven, temp and fire . getbusy making , forget to add, add too much

yep a lot I did usethe oven Last night as well to use up some leftover dough balls
This is 3 Day old dough made wed. night 9 pm as described above and I cooked these last night
I was all over with temp and flame you can see went oven floor around 800 and I actually sat down and ate with the family so few good few light , then oops forgot add some wood and a few Little well done for my liking all in all the 3 day ROCKS ! about 24 hrs total room rest in fridge 10 balls to go takin em to 5 days due to rain today ! left over from event and from the mobile so I will post em here !

John, I'm new here and have scanned this thread but haven't read every single post so forgive me if you've already answered this. But how early do you arrive for an event and how long does it take you to bring your oven to temp? What type of wood are you burning? You make some amazing looking pizzas.
