I am using a 252 G +-1 or 2 dough ball works out to a nice 12" for me . Heres the prep rack also  bifg bucket of fresh Mozz and about 10 toppings , basil and arugula ricotta goes right under in fridge for white pies

! Cant believe I got in here!   but this was1 of My Favotrite set ups to date . Guys if you are considering this business , BIGGER is not allways better! No way anyone with a  side facing oven,  concession trailer, or a big ole 48".. oven was getting in here ! Guy was very pick and left as we came no damage at all The little 40" did  65 pies 2 hrs  and out !
gotta go make pizza! later The Mayor today !!

 hi john, man am i impressed with that setup. it looks like it is part of the party theme, very professionally done!!! you know that a call is coming to ask way too many questions. and your pies are beautiful. my crew will see every one of them!!!

The Prep Table is a 48" with Marbletop

squeezed it right in like it grew there! if you walked in from the other side of the house  ( had too !) you would say How the ? did you? whats this? after the amazement dies down its OMG is this good !  :P

Scott once I unhook the oven, Using the 4 leveling jacks, some ingenuity, some pieces of 5/8 plywood and 3 guys oven Can be maneuvered into place. Other side mount ovens on a dual axle are SOL its pick a spot and drop it.this set up was a favorite for sure. If you you through the thread you can see I am able climb over curbs. get poolside , and leap tall buildings in a single bound ! I did not like becauseI am a mans  that it was smaller but right  now  I am
lovin my little oven!!
avergage party 50-75 people is no problem with this 40" might mouse Can do in 2.5 hours 3 people 1 oven, ! cut, prep back (dough, ingredients..) and me slapping my brains out  !

Back to Back ! The day after this is  is Sunday, at the Mayors House! What a spread!! I should have taken pictures of what I was looking at from my prep station. :o  the Home well over 8000 sf and the backyard wear to die for! Movie theatre 10 stadium seats! full Irish pub, gym, and a wine cellar that would curl TXcraigs toes! pond , flat screens outdoors ...
Anyway Us poor folk slapped out 55 pizza for his daughters graduation Party another Beautiful day ! arrived 1:45 back in my driveway 6:15 !
No slipping in this time, just back in and turn oven jump the curb to face the action and whala Pizza !
The crowd went nuts with the product once again and the little oven that could  performed great. Dough was made Fri am so even better than Sat but a quite a bit warmer ambient temp so a touch more work !  I turned up the heat using fresh Imported DOP Smoked Bufala Mozz. Fresh roasted Garlic (big favorite) Craig/Motorino  inspired Brussel spouts and Pancetta, Hot sopressatta Hot sausage and Mike Hot Honey Yummu ..... I was able to keep up as everyone strolled over and ordered off the menu I had prepared. Great Party!! and a great Tip $!!  
Off til sunday after a round of golf today !

yeah the 5 car garage is a dead giveaway right? Heres just a few of the pies.  I was  crankin!, so very little time and too much flour for the I - phone . I remember balking at Paulie Gees with all the bench flour everywhere and I am finding that this is the best way to really  produce! flour allover ! press 2-3 together at a time then slap... amazing how it speeds things up !
thats a homemade Pesto and Cherry tomatoes , and you all  know the other
I was told to " please stop you are killing me I cant eat another slice" asthey dove in to another creation LOL
also asked alot Saturday and sunday "where is your resturant we want to come and eat there" ???
still chasin that rainbow !! and a dream , and a little white ball !

First off let me say this this Mayor is one of the  most cool- down to earth guys I have met   ! Does the mayor thing to be a part of his own community
Nope Not in the the constuction or Disposal actually Global funds$! His other stable has 25 horses which his lovley wife  uses for training and thearaputic riding for the disabled.
Hobby no,  Passion yes! Just  Weekend warrior ! that is now turning down parties from double and triple bookings and back to back dates , why? because I want to keep it fun, and keep my family time which I also cherish ! quit my day job,are you kidding me?  :-D this is way too much work for a man of my age  ;) all this jumping around. If I had a brick and mortar maybe, just maybe I would consider it.This weekend coming up should be a hoot!  real Italian!  like Jersey housewives type shes great.Yellin at the dogs  gold leaf ceiling ....  kept saying aspet !  Hillarious, And yes this house is much bigger than the Mayors.  She says Shes Putting me on the hot seat! Has alot of friends coming sunday who have lived in Naples and now here in Jersey. Cant wait to hear these real time reviews I am nervous but confident and excited

Thanks Craig ! with the limitationns of my oven and simple recipe no starter .... I feel I am close to where I want to be. pie wise. Since the spring with the fork mixer and solid formula ( and some knowledge and experience) I feel my pizzas have been much more  consistent, last 5-6 outings for sure! Thats really what I am after, Consistency so if somone shows up that tasted from another party they say Oh yeah thats it!  Not so easy with all the variables of mobile operation ambient temp#1  But learning all the time !

OK so I turned down Saturday and thank god 99 degrees and humid. !! >:D too dang hot for a passion !
But did do today wonderful party drive way Set up, which I love! simple quick and firm.
In attendance were several people who lived in Naples! ans several others whowere from Italy! They payed me the ultimate comment and told me  I did pefect  representation of  Neapolitan Pizza! I was beeming  ;D they barely spoke English and I Had all the answers pizza wise and history wise. thanks Omid!! They loved  simple Margarita and said it was Just like Home !! Beeming again. 1 lady said seriously John Best she ever had !! wow !! I inquired as to which pizzeria (besides where his brother worked!) in Naples was his favorite and was told there are just too many good ones . I mentioned Da Michele and he said not his favorite by any means. Was impressed with the slap technique and all . This guy knew his pizza !! and I did not disappoint  , whew!
Heres the set up
oh Steve it poured rain and hail after about 35 pizzas!! Was able to finish out no problem after the storm.
