Wyckoff Family Day !!
Huge success for Flirting with Fire.  Best yet  150 pies in 3 1/2 hours  great system and good help made it all possible ! offered only Marg. and Pepp shown below. place order write it down I stretch hand off to topper he sendi it in ticket goes to cutter calls it out when done  whew! what a fun and Beautiful day! Forecast all week was for rain all day Saturday! um ??
Little chuck wagon as larry calls her, Performed Beautifully!!  2  sometimes 3  12" pies at time endless for 3+ hour floor 800-820 back 900 ish righ in the zone!
oh flew the new banner I won Playing Blackjack against the sign companyinVegas at Pizza Expo    ;D

If I was not so picky on the QC  and pickin on the topper guy next to me , I am confident I can do 175 in 3 hours 2 pies every 2 minutes. Key jere is the Dough needs to be spot on. And controlled carefully, too  slack is trouble too cold fuggettanputit  I call it the dough  dance ! Switch this, move that , put this one on top check the other one, restack, check again ... You get  the idea

Well, I do know that a guy out of the Capital area of NY--Albany/Troy area I believe, with a WFO mobile unit was telling me that when he did festivals that he was doing a par bake because he wasn't sure about the dough conditions.  I think it may have suffered for it, from the looks of things, but he had saved a round to be fresh stretched for me (spoiled) and kept it in a cooler.  I haven't chatted with him in a while, so I'll have to see what's up. 
I do know that temperatures can be quite challenging with dough.  The WFO place I was working at had huge issues with keeping the dough at the proper temperature once spring came and the place really got hot.  Hopefully they've solved that issue.
So, how big is your oven?  We're you doing two pies at once, or more than that?

Another cool Backyard set up live Band... busted off a leg on the prep table so had to use the mobile set up but pulled it off. Here is a few from Friday Night

Looks great as usual John! Sucks that the prep table broke but I kinda like the emergency set up. What do you use for bench flour?  Where did you keep your dough trays?

Wow so I did my first 3 in a row party trick fri., sat., sun. little too much work for this old man! bit tuckered out and I had to miss TPS2 :(
Anyway HUGE success all private 1) with a small barrel oven , 2) a spread that was beyond belief!  thats just the yard you dont want to know what the inside of the home looked like :) and 3) was for a graduation party for a nice guy Brandon who just graduated from the CIA (Culinary Institute of America in NYC) blew em all away ! work 2 nights til 1 am  then finished up with#3  45 pies in 2 hours in and out. Ready for a vacation!  after the 4th and 6th 
before and afteron the setup X3!

My 4th of Julycombo ! fun afternoon.  I did make the Parade in the am , Pizza, Then Fireworks at night all in a days work   ;D 1 more tomorrow then taking a much needed week off from everything taking the bike about 700 miles  up and around the heart of Vermont . Meet the Family there for some down time !

OK so The dolly is still not done ( tomorrow) but there is a great place in Newark that sell stainless table ! grabbed me one 24X48  and really like not dealing with the ramps pushing .... I will still use it on asphalt or depending on who is helping that day. But Brianna and I loaded and set this up in about 30Min!  Love it ! used the 2X4 to hold the SilverKing and the rolling cart to repace the 2X4 also able to load up the roller cart too and cut out about 4 trips
All about efficiency !
