300 people at Company picnic
and vending at the Local animal rescue shelter . Giving back for all that has been given to me !

From when I worked with John, those things on the legs just raise the table higher.

Nico under the table are a simple set of what are called bed  risers available at any store such as bed bath and beyondor container store  They raise the table closer to height of the surrounding tables and gives a nicer presentation right around $10 bucks for set of 4  work great and pretty stable too

Hi Nico,

Another trick is to use PVC pipes to raise your table. You just need to cut them to length and slide them onto the table's legs. It is very inexpensive if you were to lose them, won't rust or deteriorate over time.

Yes PVC works welll depending on you table base. if its flat bottom no go I also use a 4X4" piece of PVC board under my tables for the skinny legs dont go into soft grass or ?? Has small hole just bigger than screw base  also 1/2 way in center that I place the adjustable prep table legs into. then quicly adjust screw base to level. very slick and doesnt table cant slide off !

Just checkin In! and Yep, still at it ! Cooked Nov 23, 29, Dec 7th, 21st. coming up.I cant believe its still going ? I realize I Never Posted the Madness at the end of the year at the Pumkin Farm 100- 150 pies  a day ! every weekend in  October  :) I was getting in at 5 pm from the farm,mixing 2 batches of dough, then Balling 150 at 11:00 pm and serving at 11:00 am the next day.
Nor for the timid! But what a blast.  Good news is They Loved it !! and I am already booked for next fall !

Had the opportunity to cook in the Four Grande Mere 950B again this weekend at the annual Rick M (memeber here) Christmas party, and what a party it is ! Sweet set up tents heaters ... thanks Rick ! Some great Pies were put out for the guest to enjoy!  I had  a great helper Jimmy Coponi the 19 YO  Youngest pizziaolo who was written up on slice. Umm Yes he is Passionate ! But not really into  ant type of toppings. Said he only knows the  Margherita. A huge confident and skilled  helper against 100 + people - and he has a greed to help me this season  when he can at Flirting with Fire   :chef:   Fun Night !! here are a few pies This is my 61% dough 10 hr bulk 1.5 day cold ball and 10 hrs room temp 60ish came out great !   you can see in the first shot how the dough was a bit cold from being outside but I cranked the car up  and that was my dough room :)

Just Kidding - I test drove a Brandy new Pavesi 120 On semi enclosed trailer. Cooks like a dream ! The left black panel also comes off and there is full refriderated prep table, sinks inside  .... and check out the new Pizza Stacker Gizmo on the side  and  on the prep table, pretty slick ! Holds screens or pizza peels or plates ...
Hmmnn? what to do , what to do ?

If you had both trailers, you'd have the best of both worlds, John. ;) I myself am still trying to decide between a simple (but more labour intensive) set up, with a small trailer which can fit where others cannot... or a larger one like you have posted photos of which is self contained. Pros and cons, pros and cons!

If you buy this one, what would be the main reason? Ease of use/less setting up? I must say, the brick face with the down lights does look very cool. ;)
