Southwest pizza bistro

Hi All: I'm in the process of finding a location for a bistro style restaurant that will serve "west coast" style pizzas in addition to seared steaks, roast chicken, cedar planked salmon, and any number of other dishes from a combo wood/gas fired oven here in southwest Colorado. The pizzas will be more a flatbread style, similar to Serious Pie in Seattle. I know everyone is a neo fan, but I'm really looking for a balance that is similar to what Wolfgang Puck achieves with his ovens and bistro cafes. Been reading the forum for awhile as guest and looking forward to posting/sharing experiences as we build/launch our restaurant.--Michael

I really hate to say this but in my experience east coast pizza is far better maybe check out a couple of reciepies and do your own taste test. Good luck I hope it works out.
