flour storage
« on: June 30, 2011, 02:03:00 PM »
how important is it to keep your flours 100% airtight for storage? I am currently using some large rubbermaid buckets with a not so air-tight top.
does moisture create the flour clumping?

Exposure to air and moisture can never be a good thing when storing flour. I use food-grade plastic pails with sealed snap-on lids. I get mine from the bakery dept. of my local grocery. I think they charged me a dollar each. I've also gotten them for free at times.
